Onion Crackers Recipe-November 2024

  These crackers combine the sweet flavor of onions in the dough with the taste of Old Bay, the ubiquitous seafood seasoning. The crackers are a great recipe for children because the dough is flavorful and easy to work with, and kids can have fun at the end breaking the large pieces into bite-size bits. They go well with cheese, seafood dips and salads, steak tartare, hummus, baba ghanoush, and of course, good butter.

  

Ingredients

makes 4 large crackers

  1/2 medium sweet or yellow onion, peeled and roughly chopped

  1/2 cup/113 grams plain whole-milk yogurt

  1 teaspoon/6 grams fine sea salt

  2 cups/300 grams all-purpose flour, plus more for dusting

  2 teaspoons/10 grams Old Bay seasoning

  

Step 1

Preheat the oven to 450°F (230°C).

  

Step 2

In a food processor or blender, puree the onion, yogurt, and salt until smooth.

  

Step 3

Put the flour in the bowl of a stand mixer fitted with the dough hook. Turn the mixer on low speed and pour in the onion mixture. Increase the speed to medium-low and mix until the dough forms a ball. Increase the speed to medium and knead the dough for 3 minutes. The dough will tighten around the hook and grow silky in appearance. Turn the dough out onto a clean counter and cut it into equal pieces. Roll the pieces into balls and cover them with a towel. Let the dough rest for 10 minutes.

  

Step 4

Lightly flour your work surface and dust the dough with flour. One ball at a time, roll the dough about 1/8 inch (3 millimeters) thick. Place the dough on the back side of a baking sheet; the flatbread will cook more quickly and evenly this way. Sprinkle the dough with 1/2 teaspoon (2.5 grams) of the Old Bay seasoning. Place the baking sheet in the oven and bake for 10 minutes, until the flatbread is dry and golden brown. Remove from the oven, let it rest for 5 minutes, and move the cracker to a wire rack to cool. Repeat with the remaining 3 balls of dough. When the flatbread is cool to the touch, break it into bite-size pieces.
