How to Make Homemade Tomato Sauce using Olympic Tomatoes

Tomato sauce is a versatile and delicious addition to many dishes, and making it at home using fresh Olympic Tomatoes can elevate the flavor to a whole new level. Here is a step-by-step guide on how to make homemade tomato sauce:

Ingredients:

  • 5 pounds of Olympic Tomatoes
  • 1 medium-sized onion, finely chopped
  • 4 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1 teaspoon of sugar
  • 1 teaspoon of dried basil
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of black pepper

Instructions:

  • Wash the Olympic Tomatoes thoroughly and remove any stems or blemishes.
  • Bring a large pot of water to a boil. Carefully place the tomatoes in the boiling water and blanch them for about 1 minute.
  • Using a slotted spoon, transfer the blanched tomatoes to a bowl of ice water to cool them down quickly.
  • Once the tomatoes are cool, peel off their skins and discard them. Cut the tomatoes into quarters and remove the seeds.
  • Heat the olive oil in a large saucepan over medium heat. Add the chopped onion and minced garlic, and sauté until they become translucent and fragrant.
  • Add the quartered Olympic Tomatoes to the saucepan, along with the salt, sugar, dried basil, dried oregano, and black pepper. Stir well to combine.
  • Reduce the heat to low and let the sauce simmer uncovered for about 1 to 2 hours, stirring occasionally.
  • Once the sauce has thickened to your desired consistency, remove it from the heat and let it cool.
  • Using a blender or an immersion blender, puree the cooled sauce until smooth.
  • Taste the sauce and adjust the seasoning if needed. You can add more salt, sugar, or herbs according to your preference.
  • Pour the homemade tomato sauce into sterilized jars or containers, and store them in the refrigerator for up to a week. Alternatively, you can also freeze the sauce for longer storage.
