Definition: Citron tea, also known as yuja tea or yuzu tea, is a traditional Korean herbal tea made from the fruit of the citron tree (Citrus medica). It is a popular beverage in Korea, known for its refreshing taste and numerous health benefits.

How to Make Citron Tea

Step 1: Selecting and Preparing the Citron Fruit

Choose ripe citron fruits that are firm, smooth, and have a bright yellow color. Wash the fruits thoroughly under running water to remove any dirt or impurities. Pat them dry with a clean towel.

Step 2: Extracting the Citron Peel

Using a vegetable peeler or a sharp knife, carefully remove the outer yellow peel of the citron fruit. Take caution not to include the bitter white pith beneath the peel. Once the peels are separated, cut them into thin strips or small pieces.

Step 3: Preparing the Citron Syrup

In a large pot, combine the citron peels with an equal amount of sugar. Gently mix them together until the peels are well coated with sugar. Let the mixture sit for about 30 minutes to allow the sugar to draw out the natural juices from the peels.

Step 4: Cooking the Citron Syrup

Place the pot with the citron peels and sugar mixture on the stove over medium heat. Stir the mixture occasionally to prevent it from sticking to the bottom of the pot. Cook for about 20-30 minutes or until the sugar has completely dissolved and the syrup has thickened to a desired consistency.

Step 5: Straining and Bottling

Once the syrup has cooled down, strain it through a fine-mesh sieve or cheesecloth to remove any remaining solids. Transfer the strained syrup into clean, sterilized glass bottles or jars. Seal the containers tightly to preserve the freshness of the citron tea.

Step 6: Serving and Enjoying

To enjoy citron tea, simply mix a spoonful or two of the syrup with hot water in a cup. Stir well until the syrup dissolves completely. Adjust the sweetness and concentration according to your taste preferences. Citron tea can be served hot or cold, depending on personal preference.
