Sautéed Mushrooms—Another Dieter’s Delight. Recipe-April 2024

Ingredients

serves 2 to 4

  One 8-ounce package white button mushrooms, trimmed

  1/4 cup olive oil

  1 tablespoon balsamic vinegar (with no more than 1 gram of sugar per serving)

  2 tablespoons chopped fresh parsley

  Salt and ground black pepper to taste

  Combine the mushrooms, oil, and vinegar in a large skillet over medium heat. Cook until tender, about 12 minutes, turning midway through. Add the parsley, salt, and pepper and cook for 10 seconds.

  Cooks' Note

  Mushrooms can be substituted for many roasted or broiled meats to make a vegetarian meal. Any combination of mushrooms can be used in place of plain white mushrooms, including portobellos, shiitakes, oysters, or creminis.
