Ingredients
serves 2 to 6, depending upon your love of garlic!1 head garlic (unpeeled)
2 tablespoons olive oil
1 teaspoon chopped fresh rosemary
1/4 teaspoon salt
2 slices stone-ground whole-wheat bread
Preheat the oven to 400 degrees. Slice off the top of the garlic bulb, exposing the cloves. Place in a small ovenproof dish. Pour 1 tablespoon of the oil on top. Roast for 20 minutes. Remove the dish from the oven and preheat the broiler. Separate the garlic cloves, put them back into the dish, add the remaining 1 tablespoon oil, and sprinkle with the rosemary and salt. Broil until crisp and well browned on top, about 5 minutes. Coat the bread with the roasting liquid or a little plain olive oil, toast lightly, and spread the roasted garlic on top.
Cooks' Note
Garlic has been said to be a natural blood thinner and has been used for centuries as a “cure” for various maladies. Make sure to broil the garlic in a dish that will withstand the intense heat of a broiler.
